I always become a slave to it...It's Day 1o! I must make bread! After about 3-4 cycles, when I am throwing away the starters I should give to friends or family, I just have to stop the madness. But it is yummy bread. I didn't want to bombard too many people with starters, since I just had a round of this a few months ago, so I made two loaves for us. I used whole wheat flour, too, and instead of coming up with 4 bags of starter, I only had 3. So I think you're right about there not being as much gluten in the wheat as there is in the white. But anyway, I made one "original" recipe and one chocolate loaf. I chopped each in half as to not overload us with carbs, but both half-loaves were gone within 24 hours, mostly due to my son who pretty much polished off the half-loaf of chocolate by himself! (Can't be mad, he's a growing boy!)<br><br>Tonight I thawed the other half-loaf of chocolate and snagged a couple pieces before the rest of the family knew what was going on. Hahaha! His wife says "You didn't touch your dinosaur" (dinosaur now means lunch). Eventually, he has to have his daughter teach him how to read and speak again. That is exactly where this bread thing has us headed.
